Why Onion and Garlic Might Still Bother You (Even After Cutting the Three Drivers)

You did the elimination work. Here’s the layer underneath it — and why it’s not a setback.

You did the hard part. You cut the grains, the sugar, the seed oils — the Three Drivers that keep your histamine bucket topped off in the first place. And for a while, it worked. But now you’re staring at a pan of sautéed onions and garlic, wondering why a “healthy” dinner still leaves you bloated, itchy, or foggy by bedtime.

If that’s you, I want you to hear this clearly: it’s not in your head, and it doesn’t mean the Three Drivers work didn’t matter. It means there’s another layer underneath — and it lives in your gut.

The short version

Onion, garlic, and a handful of other genuinely healthy foods are hard for your body to fully digest. When they reach your gut bacteria instead of being absorbed upstream, that process can set off your mast cells — the cells responsible for releasing histamine in the first place. Think of it as an indirect route to the same alarm system: it’s not the food itself causing a classic allergic reaction, it’s what happens when your gut bacteria get involved.

This isn’t a life sentence against onion and garlic

Think of it the same way you thought about the Three Drivers: a rehab window, not a permanent exile. While your gut is healing, it often helps to lean less on onion- and garlic-heavy cooking and more on gentler alternatives — the same way you leaned away from grains, sugar, and seed oils at the start. Many women find that once the gut lining has had time to repair, some of these foods become tolerable again.
